Refrigerator Garlic Pickles and Onions

Ingredients
- 2 cups water
- 1 tablespoon sea salt
- 1 tablespoon sugar
- 1 cup vinegar
- 1 large or 2 small cucumbers, sliced into rounds
- 1/2 red onion, sliced into strips
- 3-4 whole cloves of fresh garlic, smashed, or teaspoon minced garlic
- a few sprigs of fresh dill or 1 teaspoon dried dill
- a few sprigs of fresh cilantro or 1 teaspoon dried cilantro
- 1 teaspoon black peppercorns
- 1 teaspoon coriander seed
- pinch of red pepper flakes (optional for a warm kick)
Instructions
- Bring 2 cups of water, sea salt, and sugar to a boil
- While your water is heating fill large jar with cucumbers, onion, garlic, dill, cilantro, peppercorns, coriander, and red pepper flakes
- Combine water solution and vinegar and pour into jar, completely covering all ingredients
- Store in the refrigerator and enjoy up to 1 month!
