Coconut Milk- 2 Ingredients

Yields approximately 4 cups coconut milk

Total Time: 15 minutes (5 mins active)

Ingredients:

  • 1 cup dried coconut (large or medium shred)
  • 4 cups hot water (not boiling, but slightly hotter than warm)

Optional ingredients:

Directions:

  1. Add ingredients to a blender and let coconut sit in warm water for about 8-10 minutes to soften
  2. Blend for about 2 minutes on a medium setting
  3. If using any optional ingredients, taste with a spoon and adjust sweetness/salt/cocoa as needed
  4. Strain through cheesecloth over fine mesh sieve and bowl, squeezing out all the liquid
  5. transfer milk from bowl into airtight container and store in refrigerator

Coconut milk will keep in the fridge for up to 5 days.
