Coconut Milk- 2 Ingredients
Yields approximately 4 cups coconut milk
Total Time: 15 minutes (5 mins active)
Ingredients:
- 1 cup dried coconut (large or medium shred)
- 4 cups hot water (not boiling, but slightly hotter than warm)
Optional ingredients:
- pinch of salt
- 1/2 teaspoon vanilla extract
- 2 heaping tablespoons cocoa powder
- 1 date, 1 tablespoon honey, or 1 tablespoon maple syrup
Directions:
- Add ingredients to a blender and let coconut sit in warm water for about 8-10 minutes to soften
- Blend for about 2 minutes on a medium setting
- If using any optional ingredients, taste with a spoon and adjust sweetness/salt/cocoa as needed
- Strain through cheesecloth over fine mesh sieve and bowl, squeezing out all the liquid
- transfer milk from bowl into airtight container and store in refrigerator
Coconut milk will keep in the fridge for up to 5 days.
